Our New Project in Ericeira
Urban Roots
Just north of Lisbon, in Ericeira, we’re working on something close to our hearts: an urban city garden where we grow vegetables, herbs, and edible flowers for our food truck.
The Pink Truck in Ericeira will serve a rotating menu that features homegrown ingredients – straight from our garden to your plate. It’s our way of closing the loop between food, land, and community.

In the years that followed, the jobs as well as the trips with Pink Truck became more and longer, we were in Malmö and Gothenburg. We also started the band Rosa Husvagnen and recorded a single that was released on Spotify and a music video on You Tube. We played live in Malmö at Far i hatten while frying quesadillas in the park.
Besides traveling around to festivals, both smaller and sometimes larger, we also do catering jobs, parties and other events. We are often told that we do not really need a festival, that it is the festival that needs us, that we are the festival. Many festival organizers have also come to this conclusion and they hire us as much for the food as for the atmosphere we spread.

Building Community Through Food and Culture
An important part of the work with Pink Truck is non-profit and in connection with the non-profit cultural association Orkanen “The Hurricane”, which we are also responsible for, a number of non-profit projects have been implemented with the aim of being a positive force for social and cultural upgrading of society.
In this work, we have developed what we call the ”Folk scene”, which in short means a stage for the people. A stage that is open to everyone, both professionals and amateurs. The philosophy behind this is our belief that free speech is sacrosanct in a democracy.
But not only that, platforms where free speech is expressed should also be free, open and fair. Many folk scenes have been set up next to the carriage over the years on different scales. One example was when we stood on a field in Stockholm and the stage also served as a night garage for the truck.
We would love to open our next folk scene in Ericeira in the future.Pink Truck is a mobile platform for cultural exchange and social engagement. We host events that go beyond catering – from neighborhood festivals to educational projects – always emphasizing inclusion, sustainability, and creativity.
Our work in Ericeira’s urban garden is a prime example: growing food together, sharing knowledge, and inviting the community to participate in the cycle of food production and celebration.
Through this cultural framework, we contribute to a more connected and conscious society, one plate at a time.

A Cultural Collective on Wheels
Pink Truck is not just a business – we’re also a registered cultural association. Through food, we explore themes of community, sustainability, and creativity. Our events aren’t just about eating – they’re about connecting people, sharing stories, and celebrating diversity.
We work with local artists, growers, musicians, and makers to turn our food truck into a moving cultural platform. Whether it’s a festival in Lisbon or a garden gathering in Ericeira, we bring together food, culture, and people in ways that feel human and meaningful.
After the stagnation of the pandemic years, it was time to move on. The future of Pink Truck was uncertain, would we continue or not? We decided not to give up, what we stood for was needed. Together, anything is possible, and with the help of family and friends, the truck could roll again.
Our business is small but genuine and everything we do is with love. It is not always easy, but worth fighting for. We are a group of people, family and friends who have contributed over the years and given the wagon soul and heart. Many have contributed in different ways to keep it alive and be an inspiration to us and all the people who see it. Just like a hurricane, The Pink Truck is hard to stop, we are a hurricane of dreams.
Pink Truck satisfies hunger in a uniquely imaginative way. With a buffet of wonderful quesadillas, but also a buffet of wonderful dreams. Dreams are sometimes weaker, sometimes they grow in strength, the important thing is that they don’t die. A dreaming person means life in its purest form.
In this way, the Pink Truck is not just a food truck, but beneath the surface it is also a symbol of man’s longing for the freedom to dream. Our dream is part of the fabric of everyone’s dreams.
